Scotch eggs

Scotch eggs are delightful starters for an appetizing meal. Halved scotch eggs are the perfect way to add hue to your dining table with their crunchy brown shells and molten yolk. Scotch eggs works best as a picnic snack when served with some piccalilli. Well, you can even serve them with Indian pickles or a bowl of curd.

Ingredients
6 eggs
300 gram pork sausage
½ tsp fennel powder
½ tsp pepper powder
½ tsp powdered dry mustard
2 tsp thyme
2 tbsp flour
3 tbsp bread crumbs
1 cup oil

Preparation
Soft boil and cook 4 eggs
Peel them and set aside
Beat the remaining 2 eggs well and set them aside
Skin the thawed sausage and mince them
Add some fennel powder, pepper powder and dry mustard 
Add some thyme and mix well
Place this mixture on top a plastic wrap
Flatten it
Place a boiled egg in the middle
Cover the egg with the sausage mix using your hands to make smooth balls
Roll them in some some flour
Dip the balls into beaten eggs 
Roll them in breadcrumbs
Heat oil in a pan and deep fry them till they turn golden brown
Cool them down for 5 minute
Cut them vertically
Sprinkle some pepper and salt over the eggs
Serve with mayonnaise or any sauce of your choice
