Make crunchy achappam easily at home

Achappam is a popular snack in Kerala made with rice flour. It is tasty, crunchy and tastes amazing with evening tea. Here is how to make it easily at home:

Ingredients
2 cups raw rice
2 eggs
4 tbsp all purpose flour
1 ½ cups coconut milk
1 tbsp sesame seeds
Sugar as required
¼ tsp salt
Coconut oil to fry

Preparation
Soak the raw rice for at least three hours
Take the soaked raw rice, eggs, all purpose flour, sugar, salt and coconut milk in a mixer jar
Blend well
Into the batter add sesame seeds
Mix well
Heat coconut oil in a pan
Meanwhile, heat the achappam mould too
Dip the hot mould in the batter
Dip the batter-coated mould into the hot oil
Shake the mould lightly to separate the achappam
Fry the achappam until both sides turn golden
Tasty and crunchy achappam is ready to eat.
