Handy tips to make softer idlis and crispier dosas

There is no confusion to the fact that Kerala’s idli and dosa are one of the best and safest breakfast bets. Keep the batter ready for the morning and it takes barely a few minutes to cook dosas. Here are a few dosa tips to make it tastier and also a trick or two to tweak the moon-faced dish to lure kids.
- A cup of aval (rice flakes) ground along with the rice or urad dal will make idlis and dosas softer.
Fret not if the batter is too loose. Mix in a big spoonful of bread crumbs or a small spoon of cornflour mixed in a quarter glass of water. Keep mixing the batter for some time.

- Grind a small piece of ginger and a green chilly along with the rice or urud dal to bring forth a flavour.
- Make small dosas instead of big ones. Spread chutney over one small dosa and top it up with another small one to make sandwich dosas.

- Wash the rice and urud dal well and soak them in clean water. While grinding, add the water in which the rice and dal were soaked. This makes for soft idlis while retaining the nutrients.
- Make small crispy dosas and stuff them with kids’ favourite fillings. This makes for dosa wraps.
