How to make perfect Kerala rice in pressure cooker?

Many are worried to cook rice in pressure cooker as they often get overcooked and mushy or end up being undercooked. However, fluffy and perfectly cooked rice could be easily made using pressure cookers if you follow these simple steps:

• Wash the rice well before adding it in the cooker. Now pour enough water to cover the rice. Close the lid and cook.

• Turn off the flame after two whistles. Allow the pressure to get released completely. When you open the lid, you may find that the rice is just half cooked. It won;'t be stuck to the bottom of the vessel and the water won't be evaporated completely.

• Pour some more water to cover the rice. Mix well before closing the lid and cook again. Turn off the flame after four whistles. Allow the cooker to release pressure and cool down. Open the lid and check whether the grains are soft and fluffy. Finally, drain the rice.

If cooked like this, you could enjoy thick and glossy rice water that is loaded with nutrients. Besides, the rice wouldn’t be overcooked and mushy. Perfectly cooked rice could be made like this in under 20 minutes.
