Nutritious drumstick leaves sambar

Drumstick leaves are known for its rich nutritious qualities. It is an amazing ingredient to boost immunity. Not just the leaves, but drumstick flowers and fruits too are storehouses of essential nutrients. Here is a recipe of drumstick leaves sambar that can be enjoyed with idli/dosa or rice.

Ingredients
2 cups drumstick leaves
½ tsp turmeric powder
½ tsp asafetida powder
½ tsp fenugreek powder
 1 tsp chilli powder
1 ½ tsp coriander powder
½ cup toor dal
2 small onions
1 tomato
3 green chillies
Gooseberry sized ball of tamarind
Salt as required
1 tbsp coconut oil
1 tsp mustard seeds
2 dried chillies
4 shallots
4 cups of water

Preparation
Wash the drumstick leaves well and finely chop them
Dry roast turmeric powder, asafetida powder, fenugreek powder, chilli powder and coriander powder
Into a pressure cooker add the toor dal, onions, tomato, green chillies, tamarind water, salt and the dry roasted masala mix
Add 2 cups water as well
Pressure cook until 3 whistles
Heat coconut oil in a pan and splutter the mustard seeds
Sauté the shallots and dried chillies
Add the chopped drumstick leaves when the shallots are brown
Cook the drumstick leaves until the water evaporates completely
Now add the pressure cooked ingredients and 2 cups hot water and salt as required
Turn off the flame when the sambar boils rapidly
Enjoy the drumstick leaves sambar.
