Soft and fluffy appam without coconut

When it comes to breakfast, appam enjoys a special place in the kitchens of central Kerala households. They are easy to make and would go with literally any spicy curry. However, one hassle most of the new-gen cooks face is the effort it takes to procure and grate and grind coconuts. It is time consuming if you are not experienced or used to the process.

What if we tell you there is an appam recipe which do not require coconut? This delicious and soft appam could be easily prepared in just half an hour, that too without adding grated coconut. Check out the recipe here:

Ingredients
2 cups of rice powder
1 tsp yeast
1 tbsp coconut oil
Lukewarm water
Sugar
Salt

Preparation

Mix half cup rice powder and half cup water in a pan

Cook until it thickens up

Meanwhile, take one and half cups of rice powder and lukewarm water in a mixer jar

Blend well

Pour most of this batter into a bowl

Add the thickened mixture into the rest of the batter in the jar

Add yeast, coconut oil, sugar, salt and lukewarm water

Blend well

Pour this into the batter in the bowl, mix well

Keep this batter aside for half an hour

By that time, the batter would rise nicely

Stir the batter

Heat an appam vessel

Pour a ladle full of batter

Rotate the vessel to spread the batter

Make sure to keep the flame on high

Lower the flame when holes begin to appear on the appam

Now, close the lid and cook the appam

Enjoy this soft and deliciousappam with vegetable, egg or meat curries.
