What makes butter garlic prawns at Navras so special?

Juicy yet crunchy butter pepper garlic prawns served as an 'elegant' starter at the Navras seafood restaurant near Pullepady bus stand at Chittoor road in Ernakulam are the current rage among seafood lovers. The rich buttery flavour with a good hit of pepper make perfectly cooked prawns extra special. The crunchy coating adds to the texture of the dish.

The chef says that many children and foreigners are eager to try out the butter garlic prawns as they are not cooked with typical Kerala spices. As Navras is exclusively a seafood restaurant, the customers can choose from the live fish and prawns available here, which are then cooked for them.

The prawns chosen by the customer are marinated for at least five minutes. Ginger-garlic vinegar, specially made by the chef, is the marinade for this dish. The marinated prawns are lightly dusted in corn flour before being fried in sunflower oil. The prawns have the perfect crunch though not deep fried. The delicious white sauce is prepared by sautéing chopped onions and lots of garlic in melted butter. Prawns are then added into it and seasoned with crushed black pepper.

Cream is added to make the sauce creamier. Finally, a bit of corn flour mixed with water is added and mixed well. This thickens the sauce which sticks to the prawns. This stunning dish, served with a refreshing cabbage, lettuce, and cucumber salad, looks incredibly appetizing. White prawns are used to prepare this tasty dish.
